You are right. The human hosts don't want to be seen as different so they deny that they are Ultras. The thing is, I wish it carries over a bit since at least one human host is not believable at all in his outright lie, but then the moment passes and no one ever brings the subject up again.
The students didn't know their teacher was Ultraman, but I wonder about that. One student figured it out early on and told the rest of the class, but simply didn't confront his teacher. Some random guest of the week said something implying that he knew the teacher was Ultraman and the students totally dismissed the claim. So you might be right, after all, about the students pretending not to know. (Either way, looks like the students all knew the truth in Mebius -- they called Ultraman 80 by their teacher's name.)
